    For those that like a BBQ here is a lovely sauce to try, quick and easy as well. I poached it off James Martin but I tweak it so its mine now 😆

    You need;

    1 small onion, chopped
    3 cloves garlic, crushed
    olive oil
    1 red chilli, finely chopped [ Play with this for heat]
    1 tsp fennel seeds, crushed
    55g/2oz dark brown sugar [A bit more makes it extra sticky]
    50ml/1¾fl oz dark soy sauce
    300ml/10fl oz tomato ketchup
    salt and pepper

    You do this;

    Fry the onion and garlic in olive oil with the chilli, fennel seeds and sugar.

    Add the soy sauce and ketchup and season with salt and pepper.

    Bring to the boil and simmer for a few minutes to combine the flavours. Use as a dip or to coat spare ribs, chicken or sausages.

    You can use as it is with the onions of whack it in a blender and pass through a sieve.

    Love it. Making the sauce in the same way. (some honey and extra spices thyme, rozemary,… depents what I’m finding in the garden 🙂 )

    And yes Zam it’s one of those add to taste items. Mustard Powder, celery salt etc etc.

    Stick it on any meat, wrap it in foil to cook, and last 10 to 15mins take off foil to get it caramelize and sticky.

    It just works.

    Sauce doesnt go well with lamb. especialy your terrible recipe

    Oh it would/does but I do have a good lamb rub as well 😉
